- Brinjal medium size.
- Cut into 4 pieces.
- Yogurt ½ cup
- ½ tsp ginger garlic paste.
- 1 tsp cashew nut paste.
- 1 tsp onion paste.
- 1 cup coconut milk.
- ½ tsp turmeric powder.
- 1 tsp chili powder.
- 2 tsp mustard oil.
- Salt to taste.
Method:
- Take one bowl to marinate the brinjal pieces.
- Add turmeric powder, salt, chili powder & yogurt.
- Mix all things nicely.
- Now cover it for 15 min.
- Heat the pan & add oil.
- After heating the oil, pour onion paste & sprinkle some salt in it.
- Fry the onion paste nicely.
- Now add ginger & garlic paste & fry it.
- Add marinated brinjal in the pan.
- Fry it for 5 min both side & add coconut milk.
- Add cashew nut paste & some mustard oil on it.
- Cover it for 10 min.
