Yummy Tummy Roasted Brinjal

Ingredients:

  1. Brinjal medium size.
  2. Cut into 4 pieces.
  3. Yogurt ½ cup
  4. ½ tsp ginger garlic paste.
  5. 1 tsp cashew nut paste.
  6. 1 tsp onion paste.
  7. 1 cup coconut milk.
  8. ½ tsp turmeric powder.
  9. 1 tsp chili powder.
  10. 2 tsp mustard oil.
  11. Salt to taste.

 Method:

  • Take one bowl to marinate the brinjal pieces.
  • Add turmeric powder, salt, chili powder & yogurt.
  • Mix all things nicely.
  • Now cover it for 15 min.
  • Heat the pan & add oil.
  • After heating the oil, pour onion paste & sprinkle some salt in it.
  • Fry the onion paste nicely.
  • Now add ginger & garlic paste & fry it.
  • Add marinated brinjal in the pan.
  • Fry it for 5 min both side & add coconut milk.
  • Add cashew nut paste & some mustard oil on it.
  • Cover it for 10 min.
